In 2002, the Gaillards chose to extend their passion for shale and slopes beyond the Rhône valley and to come and rub against the steep slopes of Banyuls and Collioure. In love with this unique terroir, Elise Gaillard perpetuates throughout the year the local traditions of winemaking and aging by obviously adding the Gaillard paw.

The Madeloc vineyard begins at sea level to climb to nearly 400 meters above sea level. The terraces allowed cultivation on the steep slopes of the Pyrenees plunging into the sea. Its southern position offers a mild climate all year round, a low rainfall except for autumn when most of the water falls in a few days. In order to avoid erosion, an ingenious system of ditches called "Peu de Gall" (rooster's foot in Catalan) allows water to be channeled.

Shales, on the other hand, are a real asset of a dry region. They store small rains and marine humidity within the sheets that compose them. The vine can then draw these resources when it needs them. The grape thus benefits from a regular maturation until the harvest offering the wines of the appellation, the elegance and finesse that we know them.

Their diverse range of Roussillon wines offer mineral white wine to natural sweet wine out of age aged in solera.
