In 2007, Pierre Gaillard moved to Faugères, seduced by the charm of the Cévennes, its scrubland and the many hillsides that hide there. In recent years, Pierre-Antoine, his son, has gradually taken over. Driven by this same desire to express terroirs as faithfully as possible, it produces authentic wines.
With the Gaillards, everything is usually a story of shale... and in Faugères there is no shortage of shale! If the name is generally associated with the scrubland and its wild landscapes, it is according to these shale soils that it was delimited. They have the particularity of storing water in depth and forcing the vine to push its roots to be able to hydrate and resist high heat. In Faugères, the shale is particularly crumbly, it easily breaks into pebbles or small slats that litter the ground which allows the vine to penetrate more easily and reach the leaves containing the water in the rock.
The wines of Cottebrune are decidedly Mediterranean with garrigue accents. The plots are mostly hidden in the middle of the forest between 200 and 300 meters above sea level. The humidity and freshness of the Cévennes allow a slow maturation of the grapes.
The reds are imbued with a freshness and minerality of rare elegance. White wines, on the other hand, appeal more with their greed and fruit.
