Following the sale of the wine trading business of their father Pascal Bouchard in 2015, Romain and Damien created their new estate “Domaine de l’Enclos” by the regrouping of their two former wine entities, “Domaine Pascal Bouchard” and “Domaine de la Grande Chaume”. In 2015, they acquired a rather large, beautiful, walled property in the heart of Chablis where they built a gravity and energy efficient winery. Today, the estate encompasses an area of 39 hectares of vineyard of which 6 hectares are certified organic, 23 hectares in organic conversion and 10 hectares which will be engaged in organic production very soon. Their vines are included in 4 levels of the Chablis appellation, including some of the finest terroirs with three Grands Crus and five Premiers Crus
